Bacon or Bust: Pancetta Caprese

Yes, this tasted as good as it looks. Actually, it was better than it looked. Since I had extra basil, tomatoes and mozzarella left over I had it a few more times. I just hate to waste good food. The added texture of the crunchy pancetta added a different dimension to this classic dish. I love the combined flavors of the tomato and the basil. Delicious.

#39. Pancetta Caprese Arrange fresh mozzarella and sliced tomatoes on a plate. Drizzle with olive oil and white wine vinegar. Sprinkle with salt, pepper, crumbled cooked pancetta and torn basil.
